Healthy Texan Week is about making simple changes that support better health! Hosted by Texas SNAP-Ed (Good Food, Good Move), this week is full of community events, games, and free resources to help you live a healthier life.

One easy way to get started? Add a little more produce to your plate鈥攚ithout breaking the bank.

This Healthy Texan Week, we鈥檝e put together a daily recipe for May 5鈥11. Try a recipe each day to make healthy eating fun, affordable, and simple for the whole family!

May 5听 鈥 Veggie Street Tacos with Fresh Salsa

Celebrate Cinco de Mayo with these colorful and crunchy veggie tacos!

Ingredients:

鈼徧 Corn tortillas

鈼徧 1 bell pepper, sliced

鈼徧 1 zucchini, diced

鈼徧 1/2 onion, sliced

鈼徧 1 tomato, chopped

鈼徧 Juice of 1 lime

鈼徧 Olive oil or spray for pan

鈼徧 Salt and pepper to taste

Instructions:

1.听听听 In a bowl, mix the bell pepper, zucchini, and onion. Add a little salt and pepper.

2.听听听 Heat a skillet over medium heat and lightly coat with oil.

3.听听听 Add the veggies to the pan and cook for 5鈥7 minutes, until tender.

4.听听听 While veggies are cooking, warm your tortillas in another pan or in the microwave.

5.听听听 Once the veggies are ready, spoon them into the warm tortillas.

6.听听听 In a small bowl, mix the chopped tomato and lime juice. Spoon over the tacos as a quick salsa.

Tip: You can add taco seasoning to the veggies while they cook for extra flavor. Want more protein? Add black beans or shredded chicken if you have them on hand!

May 6 鈥 Easy Veggie-Packed Quesadillas

A great way to use what you have in the fridge!

Ingredients:

鈼徧 1 cup shredded cheese

鈼徧 Whole wheat tortillas

鈼徧 1/2 cup spinach or kale (fresh or frozen)

鈼徧 1/2 cup mushrooms, chopped

鈼徧 Olive oil or spray for pan

Instructions:

1.听听听 Heat a skillet over medium heat and lightly coat with oil.

2.听听听 Place one tortilla in the pan.

3.听听听 Sprinkle cheese, spinach (or kale), and mushrooms evenly on top.

4.听听听 Place the second tortilla on top to make a sandwich.

5.听听听 Cook for 2鈥3 minutes per side, or until the cheese melts and the tortilla is golden brown.

6.听听听 Remove from heat, let cool slightly, and cut into triangles.

Tip: Cook until the veggies are soft and the cheese is melted. Serve with salsa or plain Greek yogurt for a healthy dip.

This refreshing snack is great for breakfast or dessert.

Ingredients:

鈼徧 1/4 cup low-sugar granola or crushed whole grain cereal

Instructions:

3.听听听 Sprinkle a little granola or crushed cereal on top.

4.听听听 Repeat the layers until all ingredients are used.

May 8听 鈥 Healthy Movie Snack: Homemade Dehydrated Fruit “Candy”

Swap the candy for something naturally sweet!

Ingredients:

鈼徧 1 lb fresh strawberries

鈼徧 Pinch of salt

Instructions:

1.听听听 Preheat oven to 200掳F.

2.听听听 Wash the strawberries and remove the leafy tops.

3.听听听 Cut strawberries in half.

4.听听听 Place the strawberries cut-side up on a baking tray. Leave space between them.

5.听听听 Sprinkle with a small pinch of salt.

6.听听听 Lower oven to 鈥淜eep Warm鈥 setting if your oven has it.

7.听听听 Place the tray in the oven. Bake for 3 hours total.

8.听听听 After 1.5 hours, flip the strawberries over.

9.听听听 Every 30 minutes, open the oven door for a few seconds to let heat and moisture out.

10.听 听After 3 hours, remove strawberries and let them cool on a wire rack.

Tip: Cook them low and slow鈥攄on鈥檛 rush or overcrowd the tray. This helps them dry out instead of getting sticky or burnt. Opening the oven a little every half hour helps them dry evenly.
